After almost a week of sitting in my fridge, I knew I had to use up the last of the veggies I bought last Saturday. If for no other reason than because I just know how much I would regret those lost onions come November.
I found this recipe on Epicurious by Googling carmelized onions and tomatoes. It was fairly simple, didn't require a ton of ingredients and tasted really delicious over a bed of arugula with fontinella cheese crumbled on top (instead of the spinach and goat cheese they recommended).
I ate it on the porch. By myself. No TV, no music, no phone or computer in front of my face. I savored every bite....the way the flavors mingled together and tasted like summer in my mouth. I will be dreaming of this meal in a few months, best to enjoy with no distractions.
